做法:春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入(rù )少(shǎo )量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
