做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的(de )时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
