做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
