做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
