做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半(bàn )掩(yǎn )住(zhù )春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
