做法:春笋(sǔn )切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
