做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
