做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
