做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
