做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
