做法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时盖(gài )上锅盖焖(mèn )。
