做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
