做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬(áo )干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
