做法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收汁(zhī )时盖上锅盖焖。
