做法:春笋切成(chéng )片后(hòu )加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖焖。
