做(zuò )法:春笋切(qiē )成(chéng )片后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡,生姜切(qiē )片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
