做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖(gài )焖。
