做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
